Cheddar Cheese Clouds
Light, savory baked puffs made by folding finely grated cheddar into whipped egg whites. They are crisp at the edges and tender and airy inside.

Step 1
Heat the oven to 180°C. Line a baking sheet with parchment paper.

Place the egg whites and cream of tartar in a clean, dry mixing bowl. Whip until the whites hold firm, glossy peaks, then briefly whip in the salt.

Sprinkle the cheddar, cornstarch, and black pepper over the whipped whites. Fold gently just until evenly distributed.

Drop 12 evenly sized mounds onto the prepared baking sheet, leaving space between them.

Bake at 180°C until puffed and golden at the edges, 12–15 minutes. The centers should reach at least 71°C.

Let the clouds rest on the baking sheet for 2 minutes, then transfer them to a wire rack and cool for 5 minutes before serving.
