Avocado Deviled Eggs

Hard-cooked egg whites filled with a creamy avocado, egg yolk, lime, and mustard mixture, then finished with paprika and cilantro.

Instructions

  1. Step 1

    Place the eggs in a saucepan and cover them with cold water by about 2.5 cm. Bring the water to a boil over high heat.

  2. Step 2

    Remove the saucepan from the heat, cover, and let the eggs stand in the hot water.

    Timer: 11 min (fixed)

  3. Step 3

    Prepare a large bowl of ice water. Transfer the eggs into it and cool completely.

    Timer: 5 min (fixed)

  4. Step 4

    Peel the eggs, halve them lengthwise, and place the yolks in a mixing bowl. Arrange the whites cut-side up.

  5. Step 5

    Halve and pit the avocado, scoop its flesh into the yolks, and mash until mostly smooth.

  6. Step 6

    Add the lime juice, mustard, salt, and black pepper. Mash and stir until creamy and evenly combined.

  7. Step 7

    Spoon the avocado filling evenly into the egg white halves.

  8. Step 8

    Sprinkle the filled eggs with paprika and chopped cilantro. Serve promptly or refrigerate until serving.
