Cauliflower Rice Stir-Fry
A savory vegetable stir-fry with cauliflower rice, tender-crisp vegetables, scrambled egg, soy sauce, ginger, and sesame oil.

Step 1
Cut the cauliflower into manageable florets. Working in batches, pulse them in a food processor until they resemble coarse grains of rice.

Crack the eggs into a mixing bowl and whisk until evenly blended.

Heat 2 tsp (10 ml) vegetable oil in a large skillet over medium heat. Add the beaten eggs, scramble until fully set, then transfer them to a clean plate.

Add the remaining 1 ¼ tbsp (20 ml) vegetable oil to the skillet over medium heat. Add the carrot and bell pepper, then stir-fry until tender-crisp.

Add the scallions, garlic, and ginger. Stir-fry over medium heat until fragrant.

Add the prepared cauliflower rice and green peas. Stir-fry over medium heat until the cauliflower is tender but not mushy.

Add the soy sauce, sesame oil, and black pepper. Toss until evenly seasoned and most excess liquid has evaporated.

Return the scrambled eggs to the skillet and toss over medium heat until broken into bite-sized pieces and steaming hot. Serve immediately.
