Carrot Cake
A moist, warmly spiced American carrot cake with chopped walnuts and tangy cream cheese frosting.
Instructions

Step 1
Heat the oven to 175°C. Line the bottoms of two 20 cm round cake pans with parchment, then coat the interiors with 2 tsp (10 ml) vegetable oil.

Whisk the flour, baking powder, baking soda, cinnamon, nutmeg, and salt together in a mixing bowl.

In a second bowl, whisk the remaining ¾ cup (170 ml) vegetable oil with the brown sugar, granulated sugar, eggs, and 1 tsp (5 ml) vanilla extract until smooth.

Add the dry mixture to the wet mixture and fold just until no dry flour remains.

Fold the grated carrots and chopped walnuts evenly into the batter.

Divide the batter evenly between the prepared pans and smooth the tops. Bake at 175°C until a skewer inserted in the centers emerges without wet batter, 28–32 minutes.

Let the cakes cool in their pans for 10 minutes.

Turn the cakes out onto a wire rack, remove the parchment, and let them cool completely.

Beat the softened cream cheese and butter until completely smooth and fluffy.

Add the powdered sugar gradually, then beat in the remaining 1 tsp (5 ml) vanilla extract until the frosting is smooth.

Place one cooled cake layer on a serving plate and spread it with some frosting. Add the second layer, then cover the top and sides with the remaining frosting.
