Caribbean Vegetable Stew
A hearty coconut-based vegetable stew with sweet potato, plantain, kidney beans, okra, thyme, allspice, and Scotch bonnet pepper.
Instructions

Step 1
Wash the fresh produce and prepare it as described in the ingredient list.

Heat the vegetable oil in the stockpot over medium heat.

Add the onion and bell pepper. Cook over medium heat, stirring occasionally, until softened.

Stir in the garlic, ginger, ground allspice, and tomato paste. Cook over medium heat until fragrant and the paste darkens slightly.

Add the tomato, coconut milk, vegetable stock, sweet potato, kidney beans, thyme, Scotch bonnet pepper, salt, and black pepper. Stir and bring to a boil over high heat.

Reduce to low heat, partially cover, and simmer until the sweet potato begins to soften.

Add the plantain and okra. Continue simmering over low heat until the plantain is tender and the sweet potato can be pierced easily.

Stir in the kale and simmer over low heat until wilted and tender.

Remove the Scotch bonnet pepper. Take the pot off the heat, then stir in the lime juice and scallions before serving.
