Quinoa and Black Bean Bowl
A hearty quinoa bowl with warm black beans and corn, fresh vegetables, avocado, and a cumin-lime dressing.
Instructions

Step 1
Place the quinoa in a fine-mesh sieve and rinse thoroughly under cool running water. Drain well.

Transfer the rinsed quinoa to a saucepan and add the water. Bring to a boil over high heat, cover, reduce to low heat, and simmer until the water is absorbed.

Remove the saucepan from the heat and leave it covered. Uncover and fluff the quinoa with a fork.

Combine the lime juice, olive oil, garlic, cumin, salt, and black pepper in a small bowl. Stir until evenly blended.

Prepare the tomato, red onion, cilantro, and jalapeño pepper and place them in a large bowl.

Place the black beans and corn in a skillet over medium heat. Cook, stirring occasionally, until hot throughout.

Add the cooked quinoa and warm bean mixture to the prepared vegetables. Pour over the cumin-lime dressing and toss gently.
