Cardamom Custard Cups
Silky baked custards gently flavored with cardamom and vanilla, cooked in individual cups in a water bath.

Step 1
Preheat the oven to 160°C. Arrange six ramekins in the roasting pan.

Combine the whole milk, heavy cream, and cardamom in the saucepan. Heat over medium heat until steaming but not boiling.

Remove the saucepan from the heat, stir in the vanilla extract, and let the dairy mixture stand.

Whisk the eggs, egg yolks, granulated sugar, and salt in the mixing bowl until smooth, without making the mixture foamy.

Slowly pour the warm dairy mixture into the egg mixture while whisking continuously.

Strain the custard through the fine-mesh sieve into the liquid measuring cup, then divide it evenly among the ramekins.

Bring the water to a boil in the kettle.

Place the roasting pan in the oven, then carefully pour the hot water into the pan until it reaches halfway up the ramekins. Bake until the edges are set, the centers still tremble slightly, and the custards reach at least 74°C internally.

Carefully lift the ramekins from the water bath and cool them at room temperature.

Refrigerate the custard cups until thoroughly chilled before serving.
