Broccoli and Rice Casserole
A comforting American casserole of tender broccoli and rice in a creamy cheddar sauce, baked until bubbling and golden.

Step 1
Preheat the oven to 190°C and set out a 23 x 33 cm casserole dish.

Combine the rice and 1 5/8 cups (385 ml) water in the saucepan and bring to a boil. Cover, reduce to low heat, cook for 15 minutes, then remove from the heat and rest covered for 5 minutes.

Place the broccoli and the remaining 2 tbsp (30 ml) water in the skillet. Cover and cook over medium heat until bright green and just tender, then uncover and let any excess water evaporate.

Transfer the broccoli to a plate. Melt the butter in the skillet over medium heat, add the onion, and cook until softened; add the garlic and cook for 30 seconds.

Sprinkle the flour over the onion mixture and stir over medium heat until no dry flour remains.

Gradually whisk in the milk and vegetable broth, then add the salt, black pepper, and paprika. Cook over medium heat, whisking often, until the sauce gently bubbles and thickens.

Remove the skillet from the heat and stir in 180 gr cheddar cheese until melted and smooth.

Fold the cooked rice and steamed broccoli into the cheese sauce. Spread the mixture evenly in the casserole dish.

Scatter the remaining 60 gr cheddar cheese over the casserole. Bake at 190°C until bubbling around the edges and lightly golden on top, then rest for 5 minutes before serving.
