Basque Cheesecake
A crustless cheesecake baked at high heat for a deeply caramelized top and a rich, creamy center.
Instructions

Step 1
Heat the oven to 220°C with a rack in the center.

Line the springform pan with two overlapping sheets of parchment paper, leaving at least 5 cm extending above the rim.

Beat the cream cheese and sugar until smooth and no lumps remain, scraping down the bowl as needed.

Add the eggs one at a time, mixing just until each egg is incorporated before adding the next.

Pour in the heavy cream and mix on low speed until the batter is uniform.

Sift the flour over the batter, then mix on low speed just until smooth.

Pour the batter into the lined pan and gently tap the pan on the counter to release large air bubbles.

Bake for 35 to 45 minutes, until the top is deeply browned, the center wobbles as one mass, and the center reaches at least 71°C.

Set the cheesecake, still in its pan, on a wire rack and cool to room temperature.

Refrigerate the cheesecake in its pan until chilled and set, then release the pan and peel away the parchment before slicing.
