Churros with Chocolate
Crisp Spanish-style churros coated in cinnamon sugar and served with a rich, thick chocolate dipping sauce.
Instructions

Step 1
Combine 6 ¼ tbsp (75 gr) of the granulated sugar with the ground cinnamon in a small mixing bowl. Set the coating aside.

Whisk the milk, cornstarch, and remaining 1 ¾ tbsp (20 gr) granulated sugar in a saucepan until smooth. Cook over medium heat, whisking, until steaming and slightly thickened.

Reduce to low heat, add the dark chocolate, and whisk until completely melted and glossy. Remove the sauce from the heat and keep it warm.

Bring the water and salt to a full boil in a clean saucepan over high heat.

Remove the saucepan from the heat. Add the flour at once and stir firmly until no dry flour remains and a smooth dough pulls away from the sides; let it cool briefly.

Fit a piping bag with a large star nozzle and fill it with the warm dough.

Pour the vegetable oil into a deep pot and heat it over medium heat to 175°C.

Pipe several 12 cm lengths of dough directly over the oil, cutting each one free with kitchen scissors. Fry in small batches, turning occasionally, until deep golden and crisp.

Lift each cooked batch out with a slotted spoon and drain briefly on paper towels.

Roll the warm churros in the prepared cinnamon-sugar coating, arrange them on a serving plate, and serve immediately with the warm chocolate sauce.
