Arroz Con Leche

A creamy cinnamon-scented rice pudding made by slowly simmering rice with whole milk, sugar, and vanilla.

Instructions

  1. Step 1

    Combine the rice, water, cinnamon stick, and salt in the saucepan. Bring to a boil over high heat.

    Ingredients used: 1.0 piece Cinnamon Stick, 1.0 gr Salt, 500.0 ml Water, 180.0 gr White Rice

    Cookware: saucepan, wooden spoon

  2. Step 2

    Reduce to low heat, cover partially, and simmer until the rice is tender and most of the water is absorbed.

    Timer: 15 min (fixed)

  3. Step 3

    Stir in the milk. Simmer uncovered over low heat, stirring frequently, until the mixture is creamy and the rice is very soft.

    Timer: 25 min (fixed)

    Ingredients used: 1000.0 ml Whole Milk

    Cookware: saucepan, wooden spoon

  4. Step 4

    Stir in the sugar and vanilla extract. Continue cooking over low heat until the sugar dissolves and the pudding lightly coats the spoon.

    Timer: 5 min (fixed)

    Ingredients used: 150.0 gr Granulated Sugar, 5.0 ml Vanilla Extract

  5. Step 5

    Remove the saucepan from the heat, discard the cinnamon stick, and let the pudding stand briefly.

    Timer: 10 min (fixed)

  6. Step 6

    Divide the arroz con leche among serving bowls and sprinkle with the ground cinnamon.
