Balsamic Roasted Vegetable Salad
A colorful salad of caramelized roasted vegetables, leafy greens, feta, fresh basil, and a balanced balsamic vinaigrette.
Instructions

Step 1
Heat the oven to 220°C and position racks in the upper and lower thirds. Set out two rimmed baking sheets.

Rinse and dry the fresh produce as needed. Prepare the eggplant, zucchini, bell peppers, onion, tomatoes, greens, and basil according to the ingredient notes.

Toss the eggplant, zucchini, bell peppers, and red onion with 2 tbsp (30 ml) olive oil, ⅝ tsp (4 gr) salt, and 1 g black pepper. Spread them in single layers across the baking sheets.

Roast the vegetables for 15 minutes, then turn them and exchange the positions of the baking sheets.

Add the cherry tomatoes to the baking sheets. Roast until the vegetables are browned and tender and the tomatoes begin to collapse.

Whisk the balsamic vinegar, Dijon mustard, honey, and garlic with the remaining 1 tbsp (15 ml) olive oil, ⅜ tsp (2 gr) salt, and 1 g black pepper until combined.

Let the roasted vegetables cool until warm rather than piping hot.

Place the salad greens in a salad bowl and add the warm roasted vegetables and balsamic dressing. Toss gently, then finish with the feta and basil.
