Baked Zucchini Fritters with Yogurt Dip
Crisp-edged baked zucchini fritters flavored with Parmesan, scallions, and garlic, served with a cool lemon-dill yogurt dip.
Instructions

Step 1
Heat the oven to 220°C. Line a baking sheet with parchment paper and brush it with 1 tbsp (15 ml) olive oil.

Put the grated zucchini in a colander, toss with ½ tsp (3 gr) salt, and let it stand for 10 minutes.

Wrap the zucchini in a clean kitchen towel and squeeze firmly until no more liquid readily drains.

Combine the squeezed zucchini, eggs, scallions, breadcrumbs, flour, Parmesan, and baking powder in a large bowl. Mix in garlic, ⅜ tsp (2 gr) salt, and 1 gr black pepper.

Divide the mixture into 12 mounds on the prepared sheet and flatten each into a fritter about 1 cm thick. Brush the tops with the remaining 1 tbsp (15 ml) olive oil.

Bake at 220°C until the undersides are golden and the fritters hold together, about 12 minutes.

Turn the fritters with a spatula and bake until browned on both sides and firm in the centers, 8 to 10 minutes.

Stir the yogurt, lemon juice, dill, 1 ½ clove (4 gr) garlic, 1 gr salt, and 1 gr black pepper together in a small bowl.

Serve the fritters warm with the yogurt dip.
