Baked Turkey Breast with Sage
A bone-in turkey breast coated with garlic-sage butter and roasted over onion and stock until juicy and golden.

Step 1
Preheat the oven to 190°C.

Combine the butter, sage, garlic, lemon zest and juice, salt, and black pepper in a mixing bowl.

Arrange the onion in the roasting dish and pour in the chicken stock.

Pat the turkey breast dry. Gently loosen the skin, spread some sage butter underneath, then coat the outside with the remaining butter; set the turkey skin-side up over the onion.

Roast until browned and the thickest part of the breast reaches 74°C, about 75–95 minutes. Begin checking at 75 minutes.

Transfer the turkey to a cutting board, cover loosely with foil, and rest for 15 minutes.

Carve the turkey breast and serve with the roasted onion and pan juices.
