Baked Sea Bass with Tomatoes

Tender sea bass fillets baked over garlicky roasted tomatoes and finished with lemon and fresh basil.

Instructions

  1. Step 1

    Preheat the oven to 220°C.

    Cookware: oven

  2. Step 2

    Combine the tomatoes and garlic with 2 tbsp (30 ml) olive oil, ½ tsp (3 gr) salt, and 1 gr ground black pepper.

    Ingredients used: 400.0 gr Cherry Tomato, 12.0 gr Garlic, 1.0 gr Ground Black Pepper, 30.0 ml Olive Oil, 3.0 gr Salt

    Cookware: Chef Knife, cutting board, mixing bowl

  3. Step 3

    Transfer the tomato mixture to the baking dish and roast at 220°C until the tomatoes begin to soften and release their juices.

    Timer: 10 min (fixed)

  4. Step 4

    Place the sea bass over the tomatoes. Coat the fillets with 1 tbsp (15 ml) olive oil and season with ¼ tsp (2 gr) salt and 1 gr ground black pepper.

    Ingredients used: 1.0 gr Ground Black Pepper, 15.0 ml Olive Oil, 2.0 gr Salt, 4.0 piece Sea Bass

  5. Step 5

    Bake at 220°C until the fish is opaque, flakes easily, and reaches 63°C at its thickest point.

    Timer: 12 min (fixed)

    Cookware: baking dish, instant-read thermometer, oven

  6. Step 6

    Drizzle the lemon juice over the fish and tomatoes, scatter with basil, and serve.
