Baked Sardines With Herbs

Fresh whole sardines baked with olive oil, lemon, garlic, and aromatic herbs until tender and lightly browned.

Instructions

  1. Step 1

    Preheat the oven to 220°C.

    Timer: 10 min (fixed)

  2. Step 2

    Brush the baking dish with 1 tbsp (15 ml) of the olive oil.

  3. Step 3

    Pat the sardines dry and place them on a clean work surface.

    Timer: 3 min (fixed)

    Combine the remaining olive oil, juice from half the lemon, garlic, parsley, oregano, thyme, salt, and black pepper.

    Timer: 3 min (fixed)

    Ingredients used: 5.0 gr Fine Salt, 12.0 gr Garlic, 1.0 gr Ground Black Pepper, 0.5 piece Lemon, 30.0 ml Olive Oil, 6.0 gr Oregano, 15.0 gr Parsley, 3.0 gr Thyme

    Cookware: Chef Knife, cutting board, mixing bowl

  5. Step 5

    Arrange the prepared sardines in one layer in the baking dish. Spoon the herb mixture over and inside the fish, then arrange the remaining lemon half around them.

    Bake for 12 to 15 minutes, until the flesh is opaque, separates easily from the backbone, and reaches 63°C internally.

    Rest the sardines for 3 minutes, then serve warm with the baked lemon.
