Baked Salmon with Asparagus

Salmon fillets and asparagus baked together with a bright lemon, garlic, dill, and olive oil dressing.

Instructions

  1. Step 1

    Heat the oven to 200°C. Line a rimmed baking sheet with parchment paper.

  2. Step 2

    Finely grate the lemon zest into a small bowl, then squeeze in its juice. Mince the garlic, chop the dill, and stir them in with the olive oil, salt, and black pepper.

    Ingredients used: 1.0 gr Black Pepper, 5.0 gr Fine Salt, 6.0 gr Fresh Dill, 8.0 gr Garlic, 1.0 piece Lemon, 30.0 ml Olive Oil

    Cookware: Chef Knife, cutting board, Fine grater, small bowl, spoon

  3. Step 3

    Trim the woody ends from the asparagus and spread the spears in a single layer on the prepared baking sheet.

  4. Step 4

    Pat the salmon dry and place the fillets among the asparagus, skin side down if applicable. Spoon the lemon dressing evenly over the salmon and asparagus.

  5. Step 5

    Bake until the asparagus is tender and the thickest part of each salmon fillet reaches 63°C, usually 12 to 15 minutes.

    Timer: 12 min (fixed)

  6. Step 6

    Rest the salmon for 3 minutes, then serve it with the roasted asparagus and pan juices.
