Baked Lentil Fries
Crisp-edged baked fries made from a seasoned red lentil mixture that is cooked, chilled until firm, cut, and oven-baked.
Instructions

Step 1
Line the square baking dish with parchment paper, leaving enough overhang to lift out the set lentil slab.

Combine the lentils with 1 ¾ cup (450 ml) water in the saucepan. Bring to a boil over high heat, then reduce to low heat.

Cook uncovered, stirring occasionally, until the lentils are very soft and most of the water has been absorbed.

Remove the saucepan from the heat and blend the lentils into a thick, mostly smooth puree.

Whisk the cornstarch with the remaining 3 ¼ tbsp (50 ml) water until no lumps remain.

Stir the cornstarch slurry, garlic, cumin, paprika, salt, and black pepper into the puree. Cook over medium heat, stirring continuously, until very thick and pulling away from the saucepan.

Spread the mixture evenly in the prepared baking dish to a thickness of about 1.5 cm. Let it stop steaming at room temperature.

Refrigerate the lentil slab until cold and firm.

Heat the oven to 220°C and line the baking sheet with parchment paper.

Lift the slab from the dish and cut it into fries about 1.5 cm wide.

Arrange the fries on the prepared baking sheet, drizzle with the olive oil, and turn gently to coat. Leave space between the fries.

Bake at 220°C until the undersides are golden and firm.

Turn the fries and continue baking at 220°C until crisp at the edges. Rest briefly before serving.

Refrigerate leftovers within 2 hours, keep them chilled, and use within 3 days. Reheat in a hot oven until steaming throughout.
