Tender haddock fillets baked with a simple sauce of butter, fresh lemon, dill, and garlic.

Instructions

  1. Step 1

    Preheat the oven to 200°C. Coat the baking dish with the olive oil.

    Pat the haddock dry and arrange the fillets in the baking dish. Season with the salt and black pepper.

  3. Step 3

    Melt the butter in a small saucepan over low heat, then remove it from the heat.

    Timer: 2 min (fixed)

  4. Step 4

    Finely grate the lemon zest, then squeeze the lemon juice into the melted butter. Chop the dill, mince the garlic, and stir both into the lemon butter.

  5. Step 5

    Spoon the lemon-dill butter over the haddock. Bake until the fish is opaque, flakes easily, and reaches 63°C at its thickest point, about 10–14 minutes.

    Let the haddock rest for 2 minutes, then serve with the juices from the baking dish.
