Baked Apple and Semolina Pudding
A softly set baked semolina pudding with tender cinnamon apples, a lightly golden top, and a rich vanilla-milk base.
Instructions

Step 1
Preheat the oven to 180°C. Grease the baking dish with 1 tbsp (14 gr) of the butter.

Peel and core the apples, then cut them into thin slices. Toss them with the lemon juice and ground cinnamon.

Heat the milk in a saucepan over medium heat until steaming but not boiling.

Reduce to low heat and gradually whisk in the semolina. Cook, whisking frequently, until thick and smooth.

Remove the saucepan from the heat. Stir in the sugar, the remaining 2 ¾ tbsp (42 gr) butter, vanilla extract, and salt, then leave the mixture to cool slightly.

Whisk the eggs in a small bowl until evenly blended.

Whisk a small portion of the warm semolina mixture into the eggs, then gradually whisk the tempered eggs back into the saucepan.

Fold the prepared apples into the semolina batter, then spread everything evenly in the greased baking dish.

Bake at 180°C until the top is lightly golden, the center is set with a slight wobble, and the internal temperature reaches at least 71°C.

Let the pudding rest before cutting or spooning it into six portions. Serve warm or at room temperature.
