Apple and Walnut Salad

A crisp leafy salad with sweet-tart apples, toasted walnuts, feta, dried cranberries, and a honey-Dijon cider vinaigrette.

Instructions

  1. Step 1

    Put the walnuts in a dry skillet over medium heat. Stir frequently until fragrant and lightly toasted, then transfer them to a cutting board to cool.

  2. Step 2

    Whisk the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and black pepper in a small bowl until emulsified.

    Ingredients used: 30.0 ml Apple Cider Vinegar, 1.0 gr Black Pepper, 10.0 gr Dijon Mustard, 45.0 ml Extra Virgin Olive Oil, 3.0 gr Fine Salt, 15.0 gr Honey

  3. Step 3

    Rinse and dry the apples. Core and thinly slice them, then thinly slice the red onion and roughly chop the cooled walnuts.

  4. Step 4

    Combine the salad greens, prepared apples and onion, dried cranberries, feta, and toasted walnuts in a large salad bowl.

    Ingredients used: 60.0 gr Dried Cranberry, 75.0 gr Feta Cheese, 150.0 gr Mixed Salad Greens

  5. Step 5

    Pour the prepared vinaigrette over the salad and toss gently until evenly coated. Serve immediately.
