Almond Joy Cake
A moist chocolate layer cake filled and covered with coconut buttercream, finished with dark chocolate ganache, toasted almonds, and shredded coconut.
Instructions

Step 1
Heat the oven to 180°C. Line the bottoms of two 20 cm round cake pans with parchment paper.

Whisk the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt until evenly combined.

In a second bowl, whisk the eggs, buttermilk, vegetable oil, and 1 tsp (5 ml) vanilla extract until smooth.

Add the dry mixture to the wet mixture and whisk just until mostly smooth. Gradually whisk in the hot coffee; the finished batter will be thin.

Divide the batter evenly between the prepared pans. Bake at 180°C until the centers spring back lightly and a tester comes out with a few moist crumbs.

Cool the cakes in their pans for 10 minutes, then turn them onto a wire rack and cool completely.

Spread the sliced almonds on a baking sheet and toast at 180°C until lightly browned and fragrant. Cool completely.

Beat the softened butter until creamy. Gradually beat in the powdered sugar, coconut milk, the remaining 1 tsp (5 ml) vanilla extract, and the almond extract, then fold in 140 gr shredded coconut.

Heat the heavy cream in a small saucepan over low heat until steaming, but do not let it boil.

Place the chopped chocolate in a heatproof bowl and pour the hot cream over it. Rest for 2 minutes, then whisk until glossy and let the ganache thicken slightly.

Place one cooled cake layer on a serving plate and spread with half of the coconut buttercream. Add the second layer and cover the top and sides with the remaining buttercream.

Pour the thickened ganache onto the center of the cake and spread it toward the edges, allowing a few drips down the sides.

Press the remaining 30 gr shredded coconut and the cooled toasted almonds over the top of the cake.

Let the ganache set before slicing and serving.
