Zucchini Fritters with Yogurt Sauce
Crispy zucchini fritters served with a creamy yogurt sauce. A delicious option for a light meal or snack.

Shred the zucchini with the box grater into the colander.

Toss the shredded zucchini with 2.0 gr salt in the colander, then let it drain for 10 minutes and press it firmly until fairly dry.

Put the pressed zucchini in the mixing bowl, lightly beat in the egg, and mix in the all-purpose flour, 1.5 gr salt, and 0.5 gr black pepper until a cohesive batter forms.

Heat 15.0 ml vegetable oil in the skillet over medium heat until shimmering. Fry one-third of the batter in small, flattened fritters for about 4 minutes, turning with the spatula, until both sides are golden and the centers are fully set with no wet egg mixture; transfer them to the colander.

Add 15.0 ml vegetable oil to the skillet and fry the second one-third of the batter for about 4 minutes, turning once, until golden and cooked through with no wet center; transfer the fritters to the colander.

Add the remaining 15.0 ml vegetable oil to the skillet and fry the final one-third of the batter for about 4 minutes, turning once, until crisp outside and fully set inside; transfer the fritters to the colander.

Wash and dry the mixing bowl. On the cutting board, mince the garlic with the chef's knife, then stir it with the plain yogurt, lemon juice, 0.5 gr salt, and 0.5 gr black pepper in the clean mixing bowl until smooth; serve the sauce alongside the fritters.
