Vegetarian Jambalaya

A flavorful one-pot meal featuring rice, vegetables, and Cajun spices. Perfect for a hearty dinner.

Instructions

  1. Step 1

    Rinse and drain the rice in the fine-mesh strainer. Rinse and drain the kidney bean, dice the onion, bell pepper, and celery, mince the garlic, and open the tomato can using the can opener.

    Cookware: can opener, Chef Knife, cutting board, fine mesh strainer

  2. Step 2

    Heat the vegetable oil in the large pot over medium heat, then sauté the onion, bell pepper, and celery for 6 minutes until softened. Add the garlic and cook for 2 minutes, stirring with the cooking spoon until fragrant.

    Timer: 8 min (fixed)

    Ingredients used: 150.0 gr Bell Pepper, 100.0 gr Celery, 15.0 gr Garlic, 150.0 gr Onion, 30.0 ml Vegetable Oil

    Cookware: cooking spoon — stirring, large pot — medium heat

  3. Step 3

    Stir in the tomato, vegetable broth, and Cajun seasoning with the cooking spoon. Bring to a simmer over medium heat, reduce to low heat, and simmer uncovered for 15 minutes until the liquid is visibly concentrated to about half its starting depth while remaining fluid around the vegetables.

  4. Step 4

    Stir the drained rice into the concentrated mixture, cover with the pot lid, and simmer over low heat for 20 minutes. The rice is done when tender and the liquid is absorbed; remove the pot from the heat if the surface is dry before the timer ends.

  5. Step 5

    Fold the kidney bean into the cooked rice with the cooking spoon, then add the salt gradually and stir gently. Cover with the pot lid and rest over low heat for 5 minutes until the beans are hot and the jambalaya is thick but moist.
