Vegan Waffles with Fresh Berries
Crisp, fluffy dairy-free and egg-free waffles served with fresh strawberries, blueberries, and maple syrup.
Instructions
-
Step 1
Rinse the strawberries and blueberries under cool running water and drain well. Hull and slice the strawberries, then set both fruits aside.
-
Step 2
Preheat the waffle iron fully according to its operating instructions.
-
Step 3
Whisk the flour, sugar, baking powder, and salt together in a large mixing bowl.
-
Step 4
Combine the soy milk and apple cider vinegar in a measuring jug. Let the mixture stand briefly to thicken slightly.
-
Step 5
Whisk 3 tbsp (45 ml) vegetable oil and the vanilla extract into the soy milk mixture.
-
Step 6
Pour the wet mixture into the dry mixture and fold until no dry flour remains. Let the batter rest.
-
Step 7
Use the remaining 1 tbsp (15 ml) vegetable oil to lightly brush the hot waffle plates, reserving enough to reapply between batches as needed.
-
Step 8
Spoon in enough batter to cover about two-thirds of the lower plate, close the waffle iron, and cook until the waffle is golden, crisp, and releases easily. Repeat with the remaining batter.
-
Step 9
Serve the waffles promptly with the prepared strawberries and blueberries, then drizzle with maple syrup.
