Vegan Stuffed Bell Peppers
Bell peppers filled with a hearty mixture of grains and vegetables, serving as a satisfying snack or appetizer.

Step 1
Preheat the oven to 190°C.

Heat 20.0 ml of olive oil in the skillet over medium heat while the oven preheats. Add onion and cook with the wooden spoon for 4–5 minutes until softened, then add garlic and cook for 1 minute until fragrant.

Stir tomato, cumin, and half of the salt, 2.0 gr, into the skillet. Simmer over medium-low heat for 8 minutes, stirring occasionally, until the mixture thickens slightly and smells savory.

Transfer the hot skillet mixture to the mixing bowl, then stir in rice and black bean. Taste the filling, then stir in the reserved 2.0 gr of salt; it should be moist, cohesive, and well seasoned.

Arrange the prepared bell pepper halves in the baking dish, cut side up, and lightly coat them with the remaining 10.0 ml of olive oil. Spoon the filling from the mixing bowl into all four halves, mounding it without packing it tightly.

Bake the filled peppers in the baking dish at 190°C for 25 minutes. They are done when the pepper walls are tender when pierced and the filling is hot with lightly browned edges.

Let the baked peppers stand in the baking dish for 5 minutes before serving, allowing the filling to settle while remaining hot.
