Vegan Sticky Toffee Pudding
A moist sponge cake drenched in a rich date syrup sauce, offering a sweet and spongy texture. Ideal for a comforting dessert after a hearty meal.
Instructions

Step 1
Use the chef's knife to chop the date, then place it in the mixing bowl.

Add 200 ml of oat milk to the date and soak for 20 minutes, then mash the softened mixture with the fork until mostly smooth.

While the date soaks, preheat the oven to 180°C.

Sift the all-purpose flour, baking soda, baking powder, and table salt into the mashed date mixture, then whisk until evenly distributed.

Melt 75 gr of vegan butter in the saucepan, then add it to the mixing bowl with 80 gr of brown sugar and 40 ml of oat milk; stir with the rubber spatula until combined.

Spread the batter evenly in one 20 cm square baking pan, place it in the oven, and bake at 180°C for 35 minutes. The sponge is done when the center springs back and the surface is firm.

While the sponge bakes, stir the coconut cream well in the saucepan, then add 25 gr of vegan butter, 100 gr of brown sugar, and 1 gr of table salt. Simmer over low heat for 8 minutes, stirring, until the sauce is glossy and slightly thickened.

Pour the hot date sauce over the warm sponge in the baking pan, using the rubber spatula to spread it evenly, and let it soak in briefly before serving.
