Turkish Zucchini Fritters

Crisp-edged Turkish-style zucchini fritters, known as mücver, flavored with feta, green onions, dill, and parsley.

Instructions

  1. Step 1

    Coarsely grate the zucchini into a colander. Toss with the salt and leave the colander over a mixing bowl to drain.

  2. Step 2

    Working in handfuls, squeeze the zucchini firmly over the bowl until very little liquid comes out. Discard the liquid and dry the bowl.

  3. Step 3

    Add the eggs, flour, feta, green onions, dill, parsley, and black pepper to the bowl. Stir until evenly combined.

    Ingredients used: 90.0 gr All-Purpose Flour, 2.0 piece Egg, 120.0 gr Feta Cheese, 20.0 gr Fresh Dill, 1.0 gr Ground Black Pepper, 15.0 gr Parsley, 4.0 piece Scallion

  4. Step 4

    Fold the squeezed zucchini into the egg mixture until no dry flour remains.

  5. Step 5

    Add the olive oil to a large frying pan and heat over medium heat until shimmering.

  6. Step 6

    Spoon small portions of batter into the pan and flatten them into fritters about 1 cm thick. Fry in batches until deep golden and set, about 3 minutes per side.

  7. Step 7

    Transfer the cooked fritters to a plate and let them rest briefly before serving warm.
