Turkish Potato Borek
A savory Turkish-style borek layered with crisp phyllo, a seasoned potato and onion filling, and a yogurt-egg sauce.
Instructions

Step 1
Put the potatoes in a saucepan, cover with cold water, and bring to a boil over high heat. Reduce to medium heat and cook until easily pierced.

Drain the potatoes thoroughly, return them to the saucepan, and mash until mostly smooth. Let them cool for 10 minutes.

Heat part of the oil in a frying pan over medium heat. Add the onion and cook until soft and lightly golden.

Combine the mashed potatoes and cooked onion in a mixing bowl. Stir in the salt, black pepper, and red pepper flakes; let the filling cool until no longer steaming.

Heat the oven to 190°C. In a clean mixing bowl, whisk the yogurt, milk, eggs, and remaining oil into a smooth sauce.

Brush the baking dish with a little sauce. Layer half of the phyllo in the dish, brushing each sheet lightly with half of the sauce and allowing the edges to fit naturally.

Spread the potato filling evenly over the phyllo. Cover with the remaining phyllo, brushing between the sheets and over the top with the remaining sauce.

Sprinkle the sesame seeds evenly over the top. Score the borek into 8 portions without cutting completely through the bottom layers.

Bake at 190°C until deeply golden, crisp, and set in the center.

Rest the borek for 10 minutes, then cut through the scored portions and serve warm.
