Börek With Spinach and Feta
A crisp, layered Turkish börek filled with sautéed spinach, onion, and feta, bound with a savory yogurt-and-egg sauce.

Step 1
Preheat the oven to 190°C. Grease the baking dish evenly with the softened butter.

Heat 1 tbsp (15 ml) olive oil in the frying pan over medium heat. Add the onion and cook until softened and translucent.

Add the spinach in batches and cook over medium heat until wilted and the released liquid has evaporated. Transfer it to the mixing bowl and let it cool slightly.

Add the feta, salt, and black pepper to the cooled spinach mixture. Stir until evenly combined.

Whisk the eggs, yogurt, milk, and remaining 4 tbsp (60 ml) olive oil in the measuring jug until smooth.

Layer 225 gr filo pastry in the baking dish, brushing each sheet lightly with about half of the egg-yogurt sauce.

Spread the spinach and feta filling evenly over the layered filo.

Cover the filling with the remaining 225 gr filo pastry, brushing each sheet with the remaining sauce. Brush any sauce left in the jug over the surface.

Score the top into 8 portions without cutting fully through the bottom layers, then sprinkle with the sesame seed.

Bake at 190°C until deeply golden, crisp, and at least 74°C in the center.

Let the börek rest before cutting along the scored lines and serving.
