Cheese and Herb Gozleme
Turkish griddled flatbreads filled with crumbled feta, parsley, and dill, cooked until crisp and golden.
Instructions

Step 1
Combine the flour with ¾ tsp (4 gr) of the salt in a mixing bowl.

Add the water and 1 tbsp (15 ml) of the olive oil. Mix into a rough dough, then knead until smooth and elastic.

Cover the dough and let it rest at room temperature.

Combine the feta, parsley, dill, black pepper, and remaining of salt in the cleaned mixing bowl.

Divide the dough into 4 equal pieces. Roll each piece into a thin circle about 25 cm wide.

Divide the filling evenly over one half of each dough circle, leaving a narrow border. Fold over the uncovered half, press out excess air, and seal the edges firmly.

Heat the skillet over medium heat.

Brush the skillet and gozleme in batches with the remaining 1 tbsp (15 ml) olive oil. Cook each gozleme until deeply golden on both sides and the dough is cooked through, turning once.

Let the gozleme stand briefly, then serve warm.
