Turkey Chili with Kidney Beans

Dice the onion and bell pepper, then mince the garlic.

Heat the olive oil in a large pot over medium heat. Add the onion and bell pepper and cook until softened.

Add the ground turkey and cook over medium heat, breaking it into small pieces, until browned and the center of the meat reaches 74°C.

Stir in the tomato paste, chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Cook over medium heat until aromatic.

Add the crushed tomatoes, chicken stock, and kidney beans. Stir well and bring to a gentle boil over high heat.

Reduce to low heat and simmer uncovered, stirring occasionally, until the chili is thickened.
