Tiramisu
Classic Italian tiramisu layered with coffee- and Marsala-dipped ladyfingers, mascarpone cream, and cocoa powder.
Instructions

Step 1
Stir the cooled espresso and Marsala together in a shallow dish.

Bring a shallow layer of water to a gentle simmer in a saucepan over medium heat, then reduce to low heat.

Whisk the egg yolks and sugar in a heatproof bowl. Set the bowl over the saucepan without letting its base touch the water, then whisk until thick, pale, and at least 71°C.

Remove the bowl from the heat and whisk for 3 minutes to cool slightly. Add the mascarpone and whisk just until smooth.

Beat the cold cream in a mixing bowl until it holds medium peaks.

Fold the whipped cream into the mascarpone mixture in two additions until evenly combined.

Quickly dip half of the ladyfingers in the coffee mixture, turning each once, and arrange them snugly in a single layer in the baking dish.

Spread half of the mascarpone cream evenly over the ladyfinger layer.

Dip the remaining ladyfingers in the coffee mixture and arrange them over the cream.

Spread the remaining mascarpone cream over the top and smooth the surface.

Cover and refrigerate at 4°C or colder until firm and fully chilled.

Sift the cocoa powder evenly over the tiramisu immediately before serving.
