Biscotti Alle Mandorle
Classic Italian almond biscotti with a crisp, dry texture created by baking the almond-studded logs twice.
Instructions

Step 1
Preheat the oven to 175°C and line a baking sheet with parchment paper.

Whisk the eggs, granulated sugar, vanilla extract, and grated lemon zest in a large mixing bowl until smooth and slightly thickened.

Whisk the all-purpose flour, baking powder, and salt together in a medium mixing bowl.

Add the dry mixture to the egg mixture and fold just until a stiff dough forms.

Fold the whole almonds evenly into the dough.

Divide the dough in half and shape it on the prepared baking sheet into two logs about 25 cm long and 5 cm wide.

Bake at 175°C until the logs are lightly golden and firm on top.

Transfer the logs to a wire rack and let them cool until firm enough to slice.

Reduce the oven temperature to 150°C. Cut each log diagonally into slices about 1.5 cm thick and arrange them cut-side down on the baking sheet.

Bake the slices at 150°C until their lower sides begin to dry and color lightly.

Turn each slice over and bake until crisp and dry.

Transfer the biscotti to a wire rack and cool completely before serving or storing.
