Almond Orange Biscotti
Crisp, twice-baked Italian cookies flavored with fresh orange and toasted almonds.
Instructions

Step 1
Heat the oven to 175°C and line a large baking sheet with parchment paper.

Spread the almonds on the prepared sheet and toast until fragrant. Transfer them to a cutting board, cool briefly, and chop coarsely.

Whisk the flour, baking powder, and salt together in a medium bowl.

Whisk the sugar and eggs in a large bowl until blended. Whisk in the melted butter, orange zest and juice, and vanilla extract.

Fold the dry mixture into the egg mixture just until a soft dough forms, then fold in the toasted almonds.

Divide the dough in half on the lined sheet. With lightly dampened hands, shape each half into a log about 25 cm long and 5 cm wide, leaving space between them.

Bake at 175°C until the logs are firm and lightly golden.

Let the logs rest on the sheet and reduce the oven temperature to 150°C.

Transfer the logs to a cutting board and use a serrated knife to cut them diagonally into slices about 2 cm thick. Arrange the slices cut-side down on the baking sheet.

Bake at 150°C for 10 minutes, turn each slice over, and bake until dry and lightly golden on both sides.

Transfer the biscotti to a wire rack and let them cool completely before serving or storing.
