Tarte Flambée
A classic Alsatian flatbread with a very thin, crisp crust topped with crème fraîche, fromage blanc, onion, and smoked bacon.
Instructions

Step 1
Heat the oven to 250°C with a rack in the lower third.

Combine 2 ¼ cup (250 gr) of the wheat flour with the water, olive oil, and salt in a mixing bowl until a rough dough forms.

Knead the dough until smooth and supple.

Cover the dough and let it rest at room temperature.

Thinly slice the onion and cut the smoked bacon into small lardons.

Stir the crème fraîche, fromage blanc, black pepper, and nutmeg together until smooth.

Dust the baking sheet and dough with the remaining ⅛ cup (10 gr) wheat flour, then roll the dough into a very thin rectangle that nearly fills the sheet.

Spread the prepared cream mixture evenly over the dough, leaving a narrow border. Scatter the prepared onion and bacon over the surface.

Bake at 250°C until the crust is crisp and deeply browned at the edges and the bacon is cooked through.
