Roasted bell pepper halves filled with quinoa, black beans, corn, tomatoes, warm spices, and cheddar cheese.
Instructions
-
Step 1
Preheat the oven to 200°C. Arrange the bell pepper halves cut-side up in the baking dish and pour the water around them.
-
Step 2
Cover the dish tightly with foil and bake until the peppers begin to soften.
-
Step 3
Combine the quinoa, vegetable broth, and ⅜ tsp (2 gr) salt in the saucepan. Bring to a boil over high heat.
-
Step 4
Cover the saucepan, reduce to low heat, and simmer until the broth is absorbed. Remove from the heat, rest covered for 5 minutes, then fluff the quinoa.
-
Step 5
Heat the olive oil in the skillet over medium heat. Add the onion and cook until softened.
-
Step 6
Add the garlic, cumin, and smoked paprika. Stir until fragrant.
-
Step 7
Add the tomatoes, black beans, corn, remaining ⅝ tsp (4 gr) salt, and black pepper. Cook over medium heat until the mixture is hot and excess moisture has evaporated.
-
Step 8
Remove the skillet from the heat. Fold the cooked quinoa, lime juice, and cilantro into the vegetable mixture.
-
Step 9
Discard any remaining water from the baking dish. Divide the quinoa filling among the pepper halves and top with the cheddar cheese.
-
Step 10
Bake uncovered at 200°C until the cheese is melted and the peppers are tender. Rest briefly before serving.
