Spinach and Feta Stuffed Filo Pastry
A crisp, golden filo pastry filled with savory spinach, feta, fresh herbs, and gently seasoned egg.

Preheat the oven to 190°C.

Heat the olive oil in a large skillet over medium heat. Add the green onions and cook until softened.

Add the spinach in batches and cook until wilted. Transfer it to a colander, cool briefly, and squeeze out as much liquid as possible.

Combine the drained spinach mixture with the feta, eggs, dill, parsley, salt, black pepper, and nutmeg.

Brush the inside of the baking dish with melted butter.

Lay five filo sheets in the dish one at a time, brushing each sheet with melted butter before adding the next.

Spread the prepared spinach and feta filling evenly over the layered filo.

Cover the filling with the remaining five filo sheets, brushing each one with melted butter. Tuck the edges into the dish.

Score the top into six portions without cutting fully through the bottom layers. Bake at 190°C until deeply golden and the center reaches 74°C.

Rest the pastry before cutting through the scored portions and serving.
