    Whisk the eggs, milk, salt, and black pepper together until evenly blended.

  2. Step 2

    Heat the olive oil in the skillet over medium heat. Add the sausage and cook, breaking it into small pieces, until browned and its center reaches 71°C.

  3. Step 3

    Add the onion, bell pepper, and jalapeño. Cook over medium heat, stirring occasionally, until the vegetables soften.

  4. Step 4

    Reduce to low heat and pour in the egg mixture. Cook while gently drawing the spatula across the skillet to form soft curds.
