Spicy Mexican Breakfast Bowl
A hearty breakfast bowl with crisp spiced potatoes, black beans, scrambled eggs, salsa, avocado, queso fresco, and fresh cilantro.
Instructions

Step 1
Preheat the oven to 220°C and place a rimmed baking sheet inside to heat.

In a large mixing bowl, toss the potatoes with 1 ¼ tbsp (20 ml) vegetable oil, ⅝ tsp salt, the chili powder, cumin, and smoked paprika. Spread them in one layer on the hot baking sheet.

Roast the potatoes at 220°C until browned and tender, turning them once halfway through.

Heat 1 tsp (5 ml) vegetable oil in a large skillet over medium heat. Cook the onion and jalapeño until softened, then add the garlic and cook for 30 seconds.

Add the black beans and cook over medium heat until hot, stirring occasionally. Transfer the bean mixture to a bowl and wipe out the skillet.

Heat the remaining 1 tsp (5 ml) vegetable oil in the skillet over medium heat. Add the eggs and the remaining ⅜ tsp (2 gr) salt, then stir gently until softly set and at least 71°C in the center.

Place the avocado on the cutting board and squeeze the limes over it, tossing gently to coat.

Divide the roasted potatoes, bean mixture, and scrambled eggs among four serving bowls. Top with the avocado, salsa, queso fresco, and cilantro.
