    Heat the olive oil in a large pot over medium heat.

    Add the onion and carrots. Cook, stirring occasionally, until the onion softens.

    Add the garlic, cumin, paprika, coriander, and chili pepper. Stir over medium heat until fragrant.

    Rinse the red lentils in a fine-mesh sieve under cool running water until the water is mostly clear, then drain well.

    Add the rinsed lentils, tomato, vegetable stock, salt, and black pepper to the pot. Bring to a boil over high heat.
