Spiced Lamb Kebabs

Middle Eastern-style ground lamb kebabs seasoned with aromatic spices, shaped onto skewers, and cooked in a grill pan.

Instructions

  1. Step 1

    Finely grate the onion, wrap it in a clean kitchen towel, and squeeze out excess moisture before transferring it to the mixing bowl. Mince the garlic, finely chop the parsley, and add both to the bowl.

    Ingredients used: 12.0 gr Garlic, 100.0 gr Onion, 20.0 gr Parsley

  2. Step 2

    Add the lamb, cumin, coriander, paprika, cinnamon, salt, and black pepper. Mix just until the seasonings are evenly distributed and the mixture holds together.

    Ingredients used: 2.0 gr Black Pepper, 1.0 gr Ground Cinnamon, 4.0 gr Ground Coriander, 4.0 gr Ground Cumin, 600.0 gr Ground Lamb, 8.0 gr Salt, 3.0 gr Sweet Paprika

  3. Step 3

    Cover the lamb mixture and refrigerate it until firm enough to shape.

  4. Step 4

    Divide the mixture into eight equal portions. Mold each portion firmly around a skewer in an even, elongated shape, then place it on a tray.

  5. Step 5

    Brush the grill pan with the olive oil and heat it over medium heat.

    Timer: 3 min (fixed)

  6. Step 6

    Place the kebabs in the hot pan and cook for about 10 minutes, turning every 2–3 minutes, until browned on all sides and the centers reach 71°C.

  7. Step 7

    Transfer the kebabs to a clean plate and let them rest before serving.
