Grilled Turkish Kofta Skewers

Juicy lamb kofta seasoned with onion, garlic, parsley, cumin, paprika, and chili, shaped around skewers and grilled until browned.

Instructions

  1. Step 1

    Grate the onion into a fine-mesh sieve. Press firmly to remove as much liquid as possible.

    Ingredients used: 100.0 gr Onion

    Cookware: Box Grater, fine mesh sieve

  2. Step 2

    Mince the garlic and finely chop the parsley. Put them in a mixing bowl with the drained onion, lamb, cumin, coriander, paprika, red pepper flakes, salt, and black pepper.

    Ingredients used: 20.0 gr Flat-Leaf Parsley, 8.0 gr Garlic, 2.0 gr Ground Black Pepper, 3.0 gr Ground Coriander, 4.0 gr Ground Cumin, 500.0 gr Ground Lamb, 4.0 gr Paprika, 8.0 gr Salt, 2.0 gr Turkish Red Pepper Flakes (Pul Biber)

  3. Step 3

    Knead the mixture firmly until cohesive and slightly sticky. Cover and refrigerate for 20 minutes.

  4. Step 4

    Divide the chilled mixture into 8 equal portions. Mold each portion firmly around a metal skewer in an even, elongated shape and place it on a platter.

  5. Step 5

    Preheat the grill on high heat for 10 minutes, then reduce it to medium heat.

  6. Step 6

    Brush the kofta evenly with the olive oil.

  7. Step 7

    Grill the skewers over medium heat, turning every few minutes, until browned and the centers reach 71°C.

  8. Step 8

    Transfer the skewers to a clean platter and rest for 3 minutes. Cut the lemon into wedges and serve them with the kofta.
