Spanish Tortilla With Potatoes
A classic Spanish omelet of tender sliced potatoes and onion bound with eggs, cooked until golden and gently set.

Step 1
Prepare the potatoes and onion as specified.

Heat 1 ¼ cup (285 ml) of the olive oil in the frying pan over medium heat for 2 minutes.

Add the potatoes, onion, and ⅝ tsp (4 gr) of the salt. Reduce to low heat and cook, turning gently every few minutes, until the potatoes are completely tender but not crisp.

Set the colander over the mixing bowl and drain the potato mixture, reserving the cooking oil for another use. Let the vegetables cool slightly.

In a clean mixing bowl, whisk the eggs with the remaining ⅝ tsp (4 gr) salt until evenly combined.

Fold the drained potato mixture into the eggs and leave it to rest so the flavors combine.

Wipe out the frying pan, add the remaining 1 tbsp (15 ml) olive oil, and heat over medium heat for 1 minute.

Pour the egg and potato mixture into the pan, spread it evenly, and reduce to low heat. Cook until the edges are firm and the center is still slightly wet.

Place the plate over the pan, hold both firmly, and invert the tortilla onto the plate. Slide it back into the pan with the uncooked side down.

Cook over low heat until the second side is golden and the center reaches 71°C.

Slide the tortilla onto the plate and rest it before cutting into wedges.
