Simit With Cheese And Tea
Crisp, sesame-coated Turkish bread rings served with Turkish white cheese and strong black tea diluted to taste.
Instructions

Step 1
Toast the sesame seeds in a dry skillet over medium heat, stirring frequently, until fragrant and lightly golden. Transfer them to a shallow bowl.

Combine the bread flour, yeast, sugar, and salt in a large mixing bowl.

Add 300 ml water and mix into a firm dough. Knead until smooth and elastic.

Cover the bowl with a kitchen towel and let the dough rise until roughly doubled in volume.

Preheat the oven to 220°C. Line a baking sheet with parchment paper.

Whisk the grape molasses with 80 ml water in the second shallow bowl.

Divide the risen dough into eight equal pieces. Roll each into a long rope, twist the ropes together in pairs, and join the ends of each pair to form four rings.

Dip each ring on both sides in the molasses mixture, coat generously with the toasted sesame seeds, and arrange on the prepared baking sheet.

Bake at 220°C until the simit are deeply golden brown and crisp on the outside.

Transfer the baked simit to a wire rack and let them cool briefly.

Bring 1600 ml water to a full boil in a kettle.

Place the black tea in a teapot and pour in 600 ml of the boiled water. Set the teapot securely over the kettle, keep the remaining 1000 ml water hot over low heat, and steep the tea.

Divide the cheese among four plates and add one warm simit to each. Pour a little tea concentrate into each glass and dilute with hot water to the desired strength.
