Sigeumchi Namul (Korean Spinach Side Dish)

A classic Korean side dish of briefly blanched spinach seasoned with soy sauce, toasted sesame oil, garlic, scallion, and sesame seeds.

Instructions

  1. Step 1

    Fill the large bowl with cold water and ice. Bring a large pot of water to a boil over high heat.

  2. Step 2

    Add the spinach and press it beneath the water. Blanch just until wilted and bright green, about 30 seconds.

    Ingredients used: 450.0 gr Spinach

  3. Step 3

    Drain the spinach immediately, then transfer it to the ice water. Swish until cool and drain again.

  4. Step 4

    Gently squeeze the spinach in small handfuls to remove excess water. Place it on a cutting board and cut it into roughly 5 cm lengths.

  5. Step 5

    Combine the soy sauce, sesame oil, garlic, scallions, sesame seeds, and salt in a mixing bowl.

    Ingredients used: 1.5 gr Fine Salt, 4.0 gr Garlic, 2.0 piece Scallion, 10.0 ml Sesame Oil, 8.0 gr Sesame Seed, 15.0 ml Soy Sauce

  6. Step 6

    Add the drained spinach to the seasoning mixture. Toss gently by hand or with utensils until the strands are evenly separated and coated, then serve.
