Shrimp and Cauliflower Rice Bowl
A fresh, savory bowl of cumin-lime shrimp, tender cauliflower rice, bell pepper, avocado, and cilantro.

Step 1
Pulse the cauliflower florets in batches until they resemble grains of rice.

Combine the shrimp with the juice of one lime, half the olive oil, half the garlic, half the cumin, all the smoked paprika, half the salt, and half the black pepper.

Heat the remaining olive oil in a large skillet over medium heat. Add the bell pepper and cook until slightly softened.

Add the remaining garlic and cook briefly, then stir in the prepared cauliflower, remaining cumin, remaining salt, and remaining black pepper. Cook over medium heat until tender but not mushy.

Divide the cauliflower rice among four serving bowls and return the skillet to medium heat.

Add the seasoned shrimp to the skillet in a single layer. Cook, turning once, until opaque and the thickest shrimp reach 63°C internally.

Top each bowl with the cooked shrimp, avocado, and cilantro. Cut the remaining lime into wedges and serve alongside.
