Sesame Chicken with Broccoli
Crisp bite-size chicken and tender broccoli coated in a glossy, sweet-savory sesame sauce.

Step 1
Whisk the soy sauce, honey, rice vinegar, brown sugar, sesame oil, and water in a small bowl until the sugar begins to dissolve. Set the sauce aside.

In a second small bowl, whisk 1 ¼ tbsp (10 gr) cornstarch with 2 tbsp (30 ml) water to make a smooth slurry. Set it aside.

Place the chicken in a mixing bowl and season it evenly with the salt and black pepper.

Add the beaten eggs to the seasoned chicken and mix well. Add 6 ¾ tbsp (54 gr) cornstarch and toss until every piece is lightly coated.

Put the broccoli and 2 tbsp (30 ml) water in the large skillet. Cover and cook over medium heat until bright green and crisp-tender, then transfer the broccoli to a plate.

Wipe the skillet dry, add 1 cup (225 ml) vegetable oil, and heat it over medium heat to 175°C. Fry the coated chicken in batches until golden and each piece reaches 74°C internally, about 4–5 minutes per batch; transfer to a paper-towel-lined plate.

Carefully discard the cooled frying oil and wipe out the skillet. Add the remaining 1 tbsp (15 ml) vegetable oil, garlic, and ginger, then cook over medium heat until fragrant.

Pour the prepared sauce into the skillet and bring it to a gentle simmer over medium heat.

Whisk the prepared slurry again, pour it into the simmering sauce, and stir until the sauce is glossy and thick enough to coat a spoon.

Add the cooked chicken and broccoli to the sauce and toss until evenly coated and hot. Fold in the sesame seeds and green onions, then serve immediately.
