Semolina Honey Cake Squares
A tender yogurt and semolina cake baked with almonds, soaked in lemon-honey syrup, and cut into 12 squares.

Step 1
Heat the oven to 180°C. Line the baking pan with parchment paper.

Whisk the semolina, flour, baking powder, and salt together.

In a separate bowl, whisk the melted butter and sugar together. Whisk in the yogurt, eggs, and vanilla until evenly combined.

Fold the dry mixture into the yogurt mixture just until no dry patches remain. Let the batter rest for 10 minutes.

Spread the batter evenly in the prepared pan. Arrange the almonds in a 3-by-4 pattern so each finished square will have one almond.

Bake at 180°C until golden, set in the center, and a knife inserted away from an almond comes out clean, 30 to 35 minutes.

While the cake bakes, combine the water and lemon juice in the saucepan. Bring to a simmer over medium heat, then cook for 3 minutes.

Remove the saucepan from the heat and stir in the honey until dissolved. Keep the syrup warm.

Set the hot cake on a wire rack and slowly pour the warm syrup evenly over its surface. Leave it in the pan until cool and the syrup is absorbed, about 60 minutes.

Lift the cooled cake from the pan and cut it into 12 squares, using the almonds as guides.
