Orange Blossom Semolina Cake
A tender Middle Eastern semolina and yogurt cake soaked with fragrant orange blossom syrup and topped with whole almonds.
Instructions

Step 1
Combine the syrup portion of the sugar with the water in the saucepan. Bring to a boil over medium heat, then reduce to low heat and simmer for 8 minutes.

Remove the saucepan from the heat and stir in the lemon juice and orange blossom water. Set the syrup aside to cool.

Preheat the oven to 180°C.

Grease the bottom and sides of the baking pan with the reserved greasing portion of melted butter.

Whisk the semolina, cake portion of the sugar, baking powder, and salt together in the mixing bowl.

Add the yogurt and remaining melted butter. Stir until evenly combined, then let the batter rest for 10 minutes.

Spread the batter evenly in the prepared baking pan and smooth the surface.

Score the batter into 12 equal squares or diamonds with the knife, then press one almond gently into the center of each portion.

Bake until deep golden and set in the center, 30 to 35 minutes.

Place the hot pan on the wire rack and carefully retrace the scored lines. Slowly pour the cooled syrup over the hot cake, distributing it evenly.

Leave the cake undisturbed until the syrup is absorbed and the cake has cooled, at least 60 minutes, then cut along the scored lines and serve.
